October Meeting Minutes

Hi Freezer Friends-
Just a few notes from our swap last night.
  • If you are looking for chicken breasts at a good price - try Costco.  Target also seems to have some good prices on meat.
  • Add-on's to meals do not need to be "approved".  If you choose to purchase something in addition to your recipe, just choose something that would be appropriate to eat with your meal - i.e. veggies, bread, cookies (which go with everything in my opinion....:)). 
  • If you've tested your recipe or tried one that we've received and have some input - please post in the comments section.
I posted the recipes for the October Menu to the October post.  Please let me know if you can't access them.  I'm having a little trouble posting a document - but I think I've worked out the kinks.  I can view it - but I want to make sure that someone else can.

Forgot to mention -- Sometimes I get really sick of pizza (Jeff ate it four times a week when we lived in Italy and likes it at least once a week now...ugh!) so if you are sick of pizza - you can use the dough to make a calzone (roll out the dough, put the toppings on half and then fold over the other half, seal, make two or three slits in the top and bake for about 25 min - until browned) or a stromboli (roll out dough into a rectangle, put meat and cheese in the middle, fold one third over the meat, fold the other side over that one - like a letter - and then bake for about 25 minutes and slice using the pizza sauce as a dip). Just a suggestion!

  2. Hey Ladies! Just tried the Veggie Enchiladas tonight and everyone loved them at our house. A quick cooking tip - if you are cooking them from frozen, plan for about 45 minutes for them to be done. Great recipe, Jenny!

  3. Hi gals! Tried Heather's pork chops last night. Oh my yum!! Really, really good. Was going to grill them but it started raining so did them in the broiler on high with oven open. Took exactly 5 minutes on each side. I let the veggies thaw for about 10 minutes before cooking them, they took about 15 minutes on the stovetop. Very easy, fun meal, we all loved it. Homework was done, kitchen was clean and kids were in bed by 7:30. Wow. I am also thinking my dish is going to need way more time than the 25-30 minutes. Probably more like 45 to an hour? You'll have to use your judgment! :)

  4. You know, I tried my stuffed shells last night and just a few thoughts on cooking time. I let them thaw on the countertop for about 4-5 hours and then baked them at 375 for 45 minutes. Then I removed the foil and baked at 400 for about another ten minutes while my garlic bread cooked with them. They still didn't look brown enough on top for me so I did run them under the broiler on high for another five minutes, and they turned out very good we thought. :) This is quite a bit longer than what I had on the original insturctions so just wanted to let everyone know.
